How about fruit kabobs? Chop fresh fruit like pineapple, melons, grapes, etc.. into 1 inch cubes and skewer.
You can make a dip by mixing vanilla yogurt, sour cream and cinnamon in you want to add a little something extra.
its called taco pizza.
you need…
light cream cheese [one package]
light salsa
shredded cheese [doesnt matter what kind]
a taco seasoning packet…
& of course tortilla chips
you melt the cream cheese in the microwave until its able to stir
[not completely melted...just to wear its movable]
add HALF of the taco seasoning packet in with the cream cheese & stir that up…
spread that onto a large platter
put some salsa on top…spread that…
then sprinkle shredded cheese on top
scoop with your tortilla chips…
& your done!
you have a DELICIOUS healthy appetizer!
:]
Shrimp are very low cal. You could do shrimp cocktail, which would be easy to eat.
Toss grape tomatoes, olives, small balls of fresh mozzarella, and even chunks of a lean meat (like turkey or lean ham), with a little olive oil, vinegar, and Italian spices.
Hummus & crackers are also healthy. You could do a variety of different flavors of hummus, and get crackers in different shapes & flavors.
The fruit kabobs are a great option because they look super cute for a party in addition to being a healthy option. Kraft Foods has a wonderful website for ideas. You can sign up for their magazine which is FULL of great ideas.
Meatballs – use ground turkey or chicken to keep it healthy. I like to add Italian spices some garlic w/ salt and pepper. Use an egg to help bind and bread crumbs (I substitute wheat germ and ground flax seed for a boost of fiber and omega 3). Instead of frying, bake at 350º for about 30 minutes or until cooked though.
Serve in marinara sauce which is low in cholesterol and is also a good source of Dietary Fiber, Vitamin A, Vitamin E (Alpha Tocopherol), Vitamin K, Potassium and Copper, and a very good source of Niacin.
If you are short on time another idea would be to do spiced mixed nuts. There are lots of different recipes out there and nuts are rich in nutrients and great in moderation. Heck! Even plain almonds are great!
Stuffed Mushrooms (yes, low call/fat believe it or not!)
12 large button mushroom
3 cloves minced garlic
3 Tbs Italian parley, finely chopped
1/4 c dry breadcrumbs
1/4 c chicken stock or broth
1/3 c parmesan cheese + more for sprinkling on top
salt and pepper to taste
Pre heat oven to 375 degrees. Wipe mushrooms clean with a damp towel. Finely chop the mushroom stems and place them in a medium bowl. Add garlic, parsley and breadcrumbs and parmesan. Mix well then add chicken stock/broth to moisten. Fill each mushroom cap with mixture and top with a little more parmesan cheese. Place the mushrooms in a baking dish and cover with foil and bake for 20 about minutes. When it looks like the mushrooms are tender, remove foil and place the dish under the broiler for just a few minutes to brown the top. Serve warm.
I have a recipe. You use 8 oz of creme cheese(low fat), 1 large can of drained chicken meat, and 1 package of dry ranch dressing mix. Mix all together and you can serve on lettuce leaves or with any kind of crackers. UMM UMM. Good luck
Hey! For appetizers fresh veggies and hummus or light ranch, fruit kabobs, or make your own low fat meatballs with lean ground turkey and fiber one as opposed to bread crumbs…shrimp cocktail, veggie egg rolls with rice paper…I also am a huge fan of Hungry Girls recipes – she has tons of appetizer and dessert recipes that are GOOD, I’ve tried many. Go to http://www.hungry-girl.com and search “Chew on this” or go to the HG books website for a slew of recipes.
