You’re going to have people tell you to just eat an apple, or fresh fruit… but you already know that:)

Layer flavored yogurt with apple-cinnamon wheat germ in parfait glasses and refrigerate over night ….

Frozen yogurt, or tofutti … you can get soy-based ice cream sandwiches in the grocery store too

Put flavored yogurt into popsicle forms (or Dixie cups) and freeze…

Berry-Good Mousse – serves 6

1 envelope unflavoured gelatin
1/4 cup orange juice
3 cups fresh strawberries
1/4 cup icing sugar
1/3 cup whipping cream (optional)
4 egg whites
1/4 cup granulated sugar
Garnish:
Fresh strawberries, hulled

In saucepan, sprinkle gelatin over orange juice. Let stand 5 minutes to soften. Warm over low heat until gelatin has dissolved.
Meanwhile, hull strawberries and place in food processor or blender. Add icing sugar and process just until pureed.
Transfer to mixing bowl and stir in gelatin mixture. Refrigerate until mixture is consistency of raw egg whites. Whip cream (if using) and set aside.
In large bowl, beat egg whites until soft peaks form. Whisk about ¼ of beaten egg whites into strawberry mixture.
Fold strawberry mixture and whipped cream into remaining beaten egg whites.
Pour into 6-cup glass serving bowl or individual glasses and refrigerate at least 4 hours or up to days.
Garnish with fresh strawberries.

I love fresh fruit! But I also love Cake!

If you’re watching your waist line and your sugar intake, this one is satisfying:

Low Sugar Strawberry Shortcake!

Most bakeries now have a no-sugar added or a sugar free angelfood cake. I like these better than pound cake, and they have fewer grams of fat and calories.

1 low sugar/sugar free angelfood cake
1 bag frozen strawberries
1 tub sugar free or lite Cool Whip

Thaw the strawberries in a bowl and drain juice into separate bowl.

Brush angelfood cake with strawberry juice.

Pile strawberries in and around the cake and top with cool whip.

strawberrry shortcake…you can use a low-fat or lite pound cake, top with fresh sliced strawberries (if you like that ’sauce’ that comes with the frozen ones, drizzle the berries with a little splenda and let sit for about an hour on your counter, an they’ll make a little sauce for you)
then top with coolwhip, or a little whipped cream….
