These chicken tenders are seasoned, then breaded and oven-fried.
INGREDIENTS:
1 pound chicken tenders
Greek or Mediterranean seasoning or other seasoning blend
1/4 cup white wine
2 tablespoons spicy brown mustard
Italian seasoned bread crumbs
PREPARATION:
Sprinkle chicken tenders lightly with Greek seasoning. Prepare a cookie sheet with foil sprayed with non-stick cooking spray. Mix coating of wine and mustard and dip chicken pieces. Roll in bread crumbs.

Place on cookie sheet. Preheat oven to 475° put chicken in and bake for about 12 minutes, or until chicken is cooked through. Serves 4.

This is an easy way:

Take boneless-skinless chicken breasts, cut them into strips. Press the pieces into Italian bread crumbs, place on a cookie sheet and bake at 350 till done (usually about 20 minutes).

If you like spicy, you can add cayenne to the crumbs, and you can experiment with different spices as well.

No grease, SUPER easy and very healthy as well!

My new favorite way to cook is with a grill pan. It’s like a frying pan with ridges. Coat the pan with pan spray. Lay the chicken tenders across the ridges. Cook on both sides. Notices the lines as if you grilled them outside. Cover one side with low or lite ranch dressing (I prefer Hidden Ranch it still maintains its flavor) to coat, turn over and coat other side. Gets brown on both sides. UMMM Good and Health. Serve with baby carrots and celery. The kids with love it.

Steamed fresh veggies and Jasmine rice complete these crunchy nuggets of flavor. Dipping sauce, optional.

Panko Chicken

Ingredients:
6 boneless, skinless chicken breast tenders
1 cup mayonaise
2 cup Panko bread crumbs (can be found in International Food Aisle)
Salt, Pepper, & Garlic Powder to taste

Prep:
Preheat oven to 375 degrees. Butter a 9″ x 13″ baking dish. Rinse chicken breast tenders & pat dry. Mix salt, pepper, garlic powder, & panko bread crumbs in shallow dish. Put mayonaise in shallow dish. Dredge the chicken breast tenders through the mayonaise and then through the Panko bread crumb mixture (works easiest with tongs). Place in 9″ x 13″ baking dish. Continue until all chicken breast tenders are coated. Bake for approximately 20-30 minutes or until chicken juices run clear & coating is slightly browned.

Buffalo Wings – Healthy Alternative

Ingredients
chicken tenders/breasts
flour
wing sauce (jarred from the grocery store)
salad dressing

Preheat the oven. Cut boneless skinless chicken breasts into strips (you may also buy the tenders). Place flour into a bowl and the wing sauce in a seperate bowl. First dredge the chicken tenders in the flour, then dip in the wing sauce and place the tenders on a baking pan/dish. Bake until the chicken is cooked through (approx. 15 minutes). Enjoy the chicken tenders with your favorite light ranch/blue cheese dressing.

*This is a really easy and healthful alternative to hot wings.
