I think you ate quite a lot of fiber, which is good, but a bit too much sugar and not enough protein. If you are not a vegetarian, I’d add some chicken to the rice dish next time. Or tuna/sardines. The peanuts did provide some protein, though.
I’d estimate breakfast (honey oats with milk and OJ) at around 450 calories. If you eat oatmeal instead you could reduce the sugar – or alternatively drink water, not OJ, and have an orange/apple on the side. OJ is v. high in sugar.
Peanut butter & jelly sandwich – about 350 calories
Unsalted peanuts: 100 calories
Brown rice dish & salad – 400 calories
Total calories: 1300. Quite good for a diet day,
I think you ate enough, but I’d swap the sugar calories for some protein.
